Chocolate Chip Snickerdoodle Cookies


These soft and chewy chocolate chip cookies are the perfect treat to satisfy your sweet tooth!  The addition of a touch of cinnamon make them taste like a chocolate chip snickerdoodle cookie. Yum! Best part is, they are gluten-free, grain-free

and refined sugar-free, but you would never know it by the way they taste. 


Ingredients:

2 eggs

5 tbsp butter

3 tbsp honey

1 tbsp coconut sugar

2 cups almond flour

3 tbsp coconut flour

1/2 tsp cinnamon 

3/4 tsp baking soda 

1/4 tsp salt

1/2 cup sugar-free dark chocolate chunks 


This amount makes 1 dozen cookies. 


Directions:

  1. Preheat oven to 350F° and line a baking tray with parchment paper. 

  2. In a small food processor or blender, blend the eggs, butter and honey until it is fully incorporated. 

  3. Add the coconut sugar, flours, baking soda, cinnamon and salt. Blend until it forms a smooth batter.

  4. Mix in the chocolate chips by hand. 

  5. Scoop a small amount of dough and roll into a ball. Lay it on the tray and press down slightly to flatten. 

  6. Bake for 12-14 minutes or until golden brown on top. Enjoy!
