With the summer heat finally heading our way here in the midwest, I know I’ll be whipping up lots of frozen treats for my kids. This refreshing mango slushie takes 5 minutes to make with 5 simple ingredients.
2 cups of frozen mango
1 can of coconut milk*
1 tbsp honey
2 mint leaves
5 ice cubes
Blend all ingredients together and enjoy!
*A note about coconut milk: Many commercially sold coconut milks have added guar gum. It is a common food additive used to thicken and stabilize. Although it is derived naturally from a plant, it can be known to increase symptoms in those with digestive disorders or IBD, so it is best avoided.
Coconut milk free of guar gum can be difficult to find in the stores. I buy all my coconut milk at Trader Joes. They sell reduced-fat and full-fat coconut milk and coconut cream in cans with no additives and it tastes great!
