This salad really packs a nutrition punch!
Leafy greens and cruciferous veggies are some of the most nutrient dense foods on our planet. They are known for their anti-cancer and anti-disease fighting compounds.
This salad is packed full of them with a base of kale, arugula and cabbage and the addition of broccoli. Not to mention the prebiotic fiber from the artichokes and red onions and the many essential nutrients found in the beets… this salad has it all!
It does not even require a fancy dressing! Just some simple olive oil and feta mixed together form a creamy dressing that brings all the flavours together so well.
Ingredients:
Kale
Arugula
Red and/or green cabbage (I used the Trader Jo’s mixed blend!)
Broccoli
Beets, cooked of course
Tomatoes
Red onion
Feta
Olive oil
Salt
Pepper
I don’t have measurements for this salad. Just throw it all in a bowl, mix together and enjoy!
Disclaimer: this salad does contain a lot of raw vegetables and fibre which could be upsetting to someone with an intestinal disorder. If you are currently undergoing a gut healing protocol, and can tolerate raw veggies, I would start with a very small amount to make sure that it does not cause upset.
